Cheese and Spinach Muffin

Serves: 6
Ingredients:
- 2 cups chopped spinach
- 2 cups tasty Cheese
- 3 tbsp chopped parsley
- 1 spring onion chopped
- 2 eggs
- 2 cups Waltanna Foods gluten free self raising flour
- ½ cup milk
- ½ pepper (red or green) diced
- 1 tbsp flax sprinkle (click this link for recipe) Can use low or no sodium stock cube
Optional:
- Salt and pepper to taste
Method:
- Preheat oven to 180°C
- Grease muffin tin
- Whisk eggs, then stir in milk and melted butter.
- Mix in grated cheese, spinach, parsley, spring onion and diced pepper.
- Add flour, salt and pepper (if using) and mix just enough until ingredients have combined.
- Bake in the oven for 20-25 minutes until cooked through (a skewer stuck into the middle should come out dry).
