Gluten Free Lemon Slice

Base
- 175g gluten free biscuits
- 1 Tbsp Waltanna Foods Flaxseed Flour
- 1 Tbsp Waltanna Foods Flaxseed Oil
- 65g butter
- Juice of 1 lemon
- 68g desiccated coconut
- 250g condensed milk
Icing
- 240g Icing sugar
- 2 Tbsp Lemon Juice
- 30g Butter Melted
- 1 Tbsp Waltanna Foods Flaxseed Oil
Method:
- Grease a slice tray and line with baking paper
- Prepare the base by crushing the biscuits.
- Melt the butter into the condensed milk.
- Mix the biscuits, butter, flax oil, coconut and condensed milk.
- Press the mixture into an even layer in the bottom of the slice tray
- Refrigerate for 30 minutes while preparing the icing.
- For the icing: melt butter and mix with icing sugar, add lemon juice and flax oil.
- Spread evenly over the lemon slice.
