At Waltanna Foods, we believe great food starts with great ingredients — and for us, that begins in the rich, fertile soils of our farm (Waltanna Farms). Our Kabuli chickpeas, also known as garbanzo beans, are the star of our naturally made chickpea flour.
Meet the Kabuli Chickpea
Unlike the smaller, darker Desi chickpea, the Kabuli variety is large, light in colour, and has a delicate, nutty flavour. Its origins trace back to Afghanistan, but today it’s beloved in kitchens across the Middle East, Mediterranean, and South America.
Cleaned with Care
After harvest, our chickpeas go through a careful cleaning process. First, air and gravity separate the crop from soil, rocks, and unwanted seeds. Next, colour sorting ensures only the best chickpeas make it through. Finally, grading removes any remaining foreign matter. By the end, all that’s left is pure, clean chickpeas — ready for milling.
Slow Milling for Quality
We use traditional stone milling to grind our chickpeas into a fine, silky flour. This process is intentionally slow, taking several days, so we avoid heat and moisture build-up that could affect freshness or flavour.
Tested, Trusted, and Hand-Packed
Before a single bag leaves the farm, our flour undergoes rigorous testing for gluten and bacterial contamination. Once cleared, it’s hand-packed — a final touch that ensures every bag meets our standards.
