Honey Mustard Chicken
Cook Time: 30 minutes
Serves: 4
Ingredients:
- 2 large chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ¼ C Waltanna Foods Plain Flour
- 1 tsp flax sprinkle (optional)
- 2 Tbs olive oil
- 1 chicken stock cube (We use Massels Stock cubes)
- 1/3 C water
- 2 Tbs Waltanna Foods Dijon Mustard
- 1 Tbs honey
- 1 C coconut cream
Method:
- Slice the chicken breasts in half lengthwise to create even pieces.
- Season both sides generously with salt and pepper.
- Lightly coat each piece in plain flour, shaking off any excess.
- Heat olive oil in a pan over medium heat.
- Pan-fry the chicken, turning frequently to prevent sticking, until lightly golden (about 3 minutes). Transfer to a plate and set aside.
- Add water, the stock cube, mustard, and honey to the same pan. Stir over medium heat until the stock dissolves and the sauce is well combined.
- Pour in the coconut cream, stirring to create a smooth sauce.
- Bring to a gentle simmer, return the chicken to the pan, and cook until the chicken is fully cooked through and the sauce has thickened (approximately 8 minutes).
